Knead the dough for 12–15 minutes until soft, smooth, and slightly sticky. Divide into 12 balls, cover, and let rise for 1 hour.
Meanwhile, melt the butter and add the diced apples, brown sugar, maple syrup, cinnamon, apple pie spice, and a pinch of salt. Cook for 3–4 minutes.
Add the cornstarch mixed with water and cook for another 1–2 minutes until thickened. Remove from heat, then add lemon juice and vanilla. Let cool completely.
Roll out each ball of dough, add the apple filling, fold, cut, and twist as shown in the video. Let rest for 20 minutes.
Brush with egg yolk mixed with a splash of milk and bake at 350°F (175°C) for 15–20 minutes until golden.
Cool slightly, drizzle with sugar glaze, and enjoy warm.
