The method

  1. Mix the yeast with the warm water and let stand for a few minutes.

  2. Sift the flour with the salt into a large bowl.

  3. Gradually add the water and yeast mixture to the flour and mix with your hand until the dough forms a ball.

  4. Turn out the dough onto a lightly floured surface and knead for 8 to 10 minutes until smooth.

  5. Place the dough in a large bowl, cover, and let it rise in a warm spot until doubled in size (about 1 to 1.5 hours).

  6. Punch down the dough and turn it out onto a lightly floured surface.

  7. Stretch the dough into an oblong shape and roll it to about 1/2 inch thick.

  8. Transfer the rolled dough to a greased or non-stick baking sheet and let it stand for another 15 minutes.

  9. Cut crosshatches in the top of the dough, about four in either direction.

  10. Brush the top with beaten egg yolk mixed with a little water and sprinkle with poppy seeds.

  11. Bake in a preheated oven at 400 degrees for 20 to 25 minutes until golden on top.
