Boil the onions for about 30 minutes, then remove and let them cool. Cut a slit down each onion without cutting all the way through, then gently separate the layers.
Mix all of the filling ingredients together in a bowl. Add a small amount of filling to each onion layer and roll tightly.
Arrange the stuffed onions closely in a pot with 2 tablespoons of oil.
Mix the soup ingredients together and pour over the onions. Place a heat-safe plate on top to keep the rolls in place.
Bring to a boil over high heat, then reduce to low, cover, and cook for about 45 minutes.
