Add everything except the softened butter and mix until completely combined. Cover and let the dough rest for about 1 hour.
After the rest, work in the softened butter until fully incorporated and the dough is smooth and elastic.
Bulk ferment until the dough is beautifully risen and puffy.
Divide and shape into 12 rolls. Cover and refrigerate overnight.
In the morning, if the rolls are already fully proofed and puffy, they can go straight from the refrigerator to the oven - no need to bring them to room temperature.
Brush with the egg and milk wash.
Bake at 350°F for about 30 minutes, or until the center of the rolls reaches at least 195°F. If they’re getting too brown before reaching temperature, loosely cover the tops with foil.
Brush with melted butter while warm.
