For the pumpkin overnight oats, combine 1 cup rolled oats, 1/4 tsp pumpkin pie spice, 1 tsp maple syrup or honey, 1/2 cup Greek yogurt, 1/4 cup pumpkin puree, and 1/2 cup milk in a bowl.
For the breakfast biscuits, preheat the oven to 375°F.
In a bowl, mix 6 eggs, 1/4 cup Greek yogurt, salt and pepper, onion and garlic powder, 2 cups flour, 2 tsp baking powder, diced ham or turkey, chopped red and orange bell pepper, chopped parsley, and 1 cup cheddar cheese.
Scoop the mixture onto a baking sheet and bake for 15-18 minutes.
For the pumpkin cream cheese muffins, preheat the oven to 350°F.
In a bowl, mix 1 cup pumpkin puree, 1/3 cup milk, 1/4 cup avocado oil, 2 eggs, 1/2 cup granulated sugar, 1/2 cup brown sugar, 1 tsp vanilla, 2 tsp pumpkin pie spice, 2 cups all purpose flour, 1 tsp baking powder, and 1 tsp baking soda.
For the cream cheese filling, mix 8 oz cream cheese, 1/2 cup powdered sugar, and 1 tsp vanilla.
Fill the muffin batter with the cream cheese filling and bake for 20-25 minutes.
