Season chicken tenderloins and marinate in buttermilk and jalapeño/pickle juice for at least 30 minutes to 1 hour.
Coat chicken in seasoned flour and let rest on a wire rack for 10 minutes before frying. Fry at 350°F until golden brown and crispy.
In a saucepan, mix buffalo sauce, honey, and hot sauce. Toss fried chicken in the hot honey sauce until fully coated.
Boil penne pasta until al dente. In a skillet, melt butter and sauté garlic and onion until fragrant. Pour in heavy cream and stir in all seasonings.
Add mozzarella and Parmesan until melted and creamy, then toss in cooked pasta.
Top creamy pasta with hot honey chicken and extra sauce if desired and enjoy.
