Melt the butter in a large pot.
Add the garlic and cook for about 30 seconds.
Add the onion and cook until softened.
Sprinkle in the flour and stir for 1 minute.
Slowly whisk in the chicken broth.
Add the heavy cream and stir until smooth.
Add the cream cheese and Boursin and stir until melted and creamy.
Add the black pepper, blackening seasoning, paprika, salt, Italian seasoning, onion powder, garlic powder, and Parmesan rind.
Let gently simmer for 3–5 minutes to thicken.
Add the mafalda noodles and cook until tender.
Stir in the shredded chicken.
Turn the heat to low and stir in the mozzarella and Parmesan until melted and creamy.
Remove the Parmesan rind and serve.
If the soup gets too thick after the noodles cook, add a little extra chicken broth until it reaches the consistency you like.
