French Onion Steak Sandwiches

The method

  1. Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.

  2. In a pan, add the butter and onions, then brown them on medium heat for 5 minutes.

  3. Reduce the heat, cover the pan, and leave on the heat for 20 minutes.

  4. Add salt and pepper, then cook for another 5 minutes until completely soft and caramelized.

  5. In another pan, add the garlic and cook for 2 minutes on medium heat.

  6. Add the stock pot, water, relish, and thyme, then bring to a simmer.

  7. Reduce the heat to low and leave to simmer while you cook the steak.

  8. Season the steak with salt, pepper, stock cube, and a drizzle of olive oil.

  9. Bring a pan to medium heat, then add the steak.

  10. For medium rare, cook for 4 minutes on one side, then turn and cook for another 3 minutes on the other side, rendering any fat for another 1 minute. Adjust timings if you have a thinner steak.

  11. Remove the steak from the pan and let it rest for 5 minutes.

  12. While the steak is resting, add the cheese to the ciabatta and cook in the air fryer for 5 minutes at 180°C or 10 minutes in the oven at 190°C.

  13. Slice the steak, then add it to the ciabatta and top with the onions.

  14. Serve with the sauce on the side for dipping.
