Prepare the chiles: Place the guajillo chiles and puya chiles in a small pot with water and let them boil until soft.
Prepare the sauce: Once the chiles are ready, place them in a blender along with 2 cups of the cooking water, the 3 garlic cloves, oregano, cumin, and salt to taste. Blend well until you obtain a smooth sauce.
Strain the sauce: Pass the mixture through a strainer to remove any seeds or skins from the chiles.
Fry the tortillas: Heat some oil in a pan. Dip a tortilla in the chili sauce and immediately place it in the pan. Fry for about 1 minute on each side and remove.
Fill the enchiladas: Place some crumbled fresh cheese on the tortilla, roll it up, and arrange it on a plate. Repeat the process until the sauce is finished.
Serve: Add chopped lettuce, Mexican cream, and more crumbled fresh cheese on top.
