Rinse and soak the rice for 20–30 minutes.
In a heavy-bottom pot, heat oil and ghee on low. Add chili powder, then sauté onions and green chilies until golden.
Add bay leaves, mint, and coriander. Sauté for a minute.
Add ginger garlic paste and crushed shallots. Sauté.
Add yogurt, tomatoes, and salt. Cook until the tomatoes turn soft.
Add the ground masala and cook until the oil separates.
Add mushrooms and cook until the water oozes out and the oil separates.
Add 3 cups water and bring to a boil. Add the soaked rice.
Cook until ¾ of the water is absorbed. Add chopped mint and coriander.
Cover and simmer on low for 15–20 minutes.
Turn off the heat and let it rest for 10 minutes before opening.
