Season the salmon fillets generously with salt and black pepper on both sides. Heat a little olive oil in a skillet and cook the salmon until fully cooked and lightly golden on the outside. Remove from the pan and let it cool slightly.
In the same skillet, add the fresh spinach and sauté until wilted and cooked through. Remove from the heat.
Flake the cooked salmon into a bowl. Add the cooked spinach, cream cheese, grated garlic, grated cheese, lemon juice, salt, and black pepper. Mix everything together until well combined and creamy.
Cook the jumbo pasta shells in salted boiling water according to the package instructions, until al dente. Drain and let them cool enough to handle.
Preheat the oven to 375°F (190°C). Spread the tomato sauce evenly over the bottom of a baking dish. Fill each pasta shell generously with the creamy salmon and spinach mixture, then arrange the stuffed shells in the baking dish.
Sprinkle the shells generously with grated cheese. Bake for 20–25 minutes, or until the cheese is melted, bubbly, and golden brown.
Let the pasta rest for a few minutes before serving. Enjoy!
