The method

  1. Chop 6 tbsp of sun-dried tomatoes, 1/2 yellow onion, 2 whole carrots, and 2–3 cloves of garlic into tiny pieces and set aside.

  2. Brown 3/4 lb of Italian sausage in a pot, then remove it and set aside.

  3. Add 1 tbsp of butter to the same pot, then sauté the onion, carrots, and garlic until softened.

  4. Sprinkle in 1 tbsp of gluten-free flour and mix everything together.

  5. Pour in 1 cup of chicken broth, followed by 1 cup of heavy cream, stirring as you go.

  6. Season with salt, pepper, Italian seasoning, and red pepper flakes.

  7. Once the sauce is simmering, add 1 package of gluten-free gnocchi and let it simmer for 5–7 minutes.

  8. Once the gnocchi is cooked, add the 6 tbsp of sun-dried tomatoes, 1/2 cup of grated parmesan, the cooked Italian sausage, and 1 handful of spinach.

  9. Mix everything together and serve!
