Cook the Buldak noodles until about halfway done, then drain and set aside.
In a pan over medium-low heat, add the pepper jack, baby Swiss, and cheddar cheese.
Add Kewpie mayo, ketchup, chili oil, Buldak sauce, Buldak seasoning powder, and chopped green onions. Mix until the cheese starts to melt.
Pour in heavy cream and mix until smooth and creamy.
Add the half-cooked Buldak noodles and toss until fully coated in the cheesy sauce.
Top with shredded mozzarella, cover, and let it melt.
Finish with a fried egg, dumplings, and sausage. Drizzle with extra chili oil and top with green onions.
