Add the chicken to a large pan with the smoked paprika, garlic granules, and oregano. Cook for a minute or so until the chicken is starting to brown.
Add the onion and peppers and cook for a few minutes until softened.
Add the garlic, tomato purée, and 4 tbsp BBQ sauce. Mix well and cook for another minute.
Pour in the chicken stock and give everything a good stir.
Add the cooked basmati rice, mix everything together, and simmer for a few minutes until the rice is piping hot and most of the liquid has been absorbed.
Sprinkle over the cheese, pop the lid on, and leave for a couple of minutes until the cheese has completely melted.
Finish with fresh parsley and an extra drizzle of BBQ sauce.
