Bagel with Tuna Salad

The method

  1. On a clean work surface, place the flour, baking powder, and salt in a neat pile on the countertop.

  2. Mix roughly using a spoon but ensuring the flour stays in its place.

  3. Make a small well in the center and pour in the olive oil and Greek yogurt.

  4. Gather the flour from all around the sides and begin mixing on the work surface until you form a dough. Add more yogurt if it needs extra liquid.

  5. Knead for a few minutes until the dough is lovely and smooth.

  6. Roll into a ball and use your thumb to make a hole in the center. Begin to stretch the hole and shape into a bagel. Make sure the hole is large enough as the bagel will rise in the oven.

  7. Place onto a lined baking tray and brush with a beaten egg.

  8. Sprinkle with the seeds of your choice.

  9. Bake in the oven at 200°C (180°C fan) for 20 minutes or until golden brown.

  10. Meanwhile, mix the tuna, red onion, mayonnaise, mustard, and salt & pepper in a small bowl until thoroughly combined.

  11. Once the bagel has finished cooking, remove from the oven and wait a few minutes before slicing.

  12. You can toast if you like but it's fresh enough to leave it untoasted.

  13. Carefully spoon over the avocado and then top with the tuna salad.

  14. Finish with the fresh cucumber, a sprinkle of salt & pepper, and a drizzle of extra virgin olive oil.
